1. Rice and paella

The star ingredient of Valencia’s gastronomy is undoubtedly rice. For this reason we put it in the first place to tell you about the many wonders that Valencian cuisine achieves with this simple ingredient.

The best known option is, without a doubt, paella. Valencian paella, either chicken, seafood, or rabbit (but never mixed), is the most popular dish in restaurants, but not the only one.

Apart from the paella, we have the baked rice, the black rice, the rice with beans and turnips (more soupy) and the arroz a banda. There is a variant, which is to use noodles instead of rice (fideuà), but rice is the classic.

2. Esgarraet

It is a kind of salad composed of roasted red pepper, cod, olives, garlic and olive oil. It is an ideal dish to try in the summer time, as it is cool and relieves the heat very well.

The name of the dish comes from the fact that in its preparation you have to “tear” both the cod and the pepper. The salty flavor of the cod contrasts with that of the pepper and makes it a very juicy dish for those who try it.

This dish has its origin in the Albufera, and is one of the most recommended dishes to try in the gastronomy of Valencia. Its star ingredient is eels, the most common fish in the area.

The dish is cooked in earthenware dishes and has garlic, almonds, and bread and paprika that are fried and boiled. The eels are added to the mixture and it is ensured that the mixture of almonds, garlic and bread is thick so that the result is a dish where it is impossible not to wet the bread.

4. Tigernut horchata

We move on to one of the best sweet proposals that the gastronomy of Valencia has. It is prepared with water, sugar and ground or wet tigernuts,  to which cinnamon and lemon peel are added. The tigernut is a plant used in Egypt from which the tubers are taken and treated to result in a sweet and refreshing drink.

You will find this delicious drink in countless establishments. A drink, by the way, that is rich in minerals and vitamins. Therefore, for years it was used to treat diseases. It is typical to accompany it with fartons, elongated and tender sweets.

During the celebrations in Valencia some  sweets tend to stand out , such as the Jijona nougat, made with almonds and sugar. The same happens with the arnadí, only that it is usually more typical during Easter and Lent and is made with pumpkin and sugar, flour, cinnamon and egg.

6. Valencian drinks

In this last section, it  is inevitable to talk about the water of Valencia, a cocktail made with cava or champagne, orange juice, vodka and gin. It emerged in 1959 at the Madrid Brewery in Valencia. It is usually served in jugs, and once discovered, its popularity has spread throughout Spain.

On the other hand, in Valencia there are also good wines. The white wines from Alto Turia and those from Utiel-Requena stand out.
